Rottnest Island Christmas Fruit Cake Gin
When my mother, Val left home she was gifted a copy of the CWA cookbook (1953 edition). This much used and loved book was in frequent use and traveled the globe with her & her young family, supplying her homesick clan with all the Aussie classics: Hovis scones, Lamingtons, Afghan & Anzac biscuits and my mother’s personal favorite; a rich Xmas fruit cake recipe.
The leftover Christmas cake was often consumed on Rottnest over the summer holidays and such was her passion for this recipe, one of her final requests before she passed away was to arrange a chef to bake a large Christmas fruit cake to be individually delivered to her friends & family.
